It would be nice to be able to create a signature that would be assigned to the end of each message/email when sending or replying so I don't have to type it every time.
Thank you for submitting this idea, William. It has been put up for voting several times in the past, but thus far hasn't gained enough traction to proceed to the next stage of consideration. As times change, users' priorities do as well, so perhaps your idea will receive more support this time around. Do you honestly rely on upvoting in these forums to decide on new features? No one wants to create a yet another profile just to log in and upvote something that should be a standard feature to begin with. (And I doubt most instructors even know these forums exist.) I don't even know why this is something we have to ask for. An email signature is not some obscure or special feature. We all use them in our university email accounts, so why wouldn't we want them to be integrated into Canvas? If Canvas is supposed to make our course administration and communication more streamlined, why wouldn't you include a standard feature? Desire 2 Learn has it (and D2L is also generally more intuitive than Canvas to begin with).

The Canvas Community is an area where Instructure enables us, as users, to share ideas, thoughts, feedback, needs and desires. As a community, we can then discuss, compare notes, and collaboratively vote for what we, as a community want to see in the product.
Stefanie is spot on that there have been numerous other occasions where similar idea were raised. I have noted the following occurrences:
From these references, historically, there just hasn't been the collective support to see the idea progressed further. You can have a look at ideas currently on the product radar to have a look at the sorts of thresholds that ideas in following stages have received to gain traction. The voting process and thresholds is of course not an exact science, each case is different. Hence the awesome Community team (including Stefanie) work to review ideas and act as the conduit between the community, and the product managers. For reference, the full feature idea process is documented in How does the feature idea process work?.
The great thing about the community is that passionate people like you and I can champion ideas. Championing an idea, including sharing it with our peers, in the community, and in other avenues in our day-to-day work all help to get ideas seen by more members of the community. With enough support (including votes and discussion), and especially including both sides of the coin, Instructure can factor the collective needs and desires of their users into their product roadmap.
I would also encourage you to have a look at Project Khaki as it is my favourite example of the degree to which Instructure empowers the community to contribute to the roadmap of the product (my favourite highlight is handing around 20% of engineering time to the community for Khaki tasks). You can also see the Khaki 2017: Priorities & Related Ideas list that resulted from the session with ~40 selected community members.
It would be great to see you champion this idea, as I can see you are passionate about it and that you would love to see it added. The more votes that the idea gets, the better chance it has of gaining visibility and traction, it is just unfortunate in this case that the previous instances haven't gained the level of traction needed.
I would be more than happy to answer any of your questions to help you out. Oh and again, please feel free to share this idea and even the Canvas community with your fellow instructors. The more people we have here comparing thoughts, notes, and ideas the better!

Adding my voice to this. Please add a signature line to the email features. It would make our emails look more professional coming from the instructors where we can include our name, title, and contact info (like I have below), without having to type it over and over. The email above from Stuart said you had 37 votes in favor.. how many do you need to create this feature?

this is a required part of any outgoming email at the university.
Electronic Signature - insert into docs on screen. Needed! In other LMSs you can do this. In Acrobat and Nitro you can do this. In Canvas you can't - please Canvas introduce either a button or an electronic signature one-time generator (thereafter multiple use) or just allow "insert graphic" so we could copy and paste in an electronic picture (gif or png). At the moment one can't copy and past at all - even in teacher/assessor mode. (One long laborious workaround is to download then edit in Nitro, adding in comments etc and insert electronic signature and then reupload to Canvas, or to print out pages needing signature and then scan them back in once hand signed). People reading this - please vote and spread the word - not sure how many people needed for them to action this - but I'm sure it's more than 30!
I'll add that we should have this. It would help things look more professional.
