It would be much easier to be able to view individual assignment grades as percentages in the grade book view. At the moment there doesn't seem to be a way to do this.
This is currently possible, you just need to have a setting sit differently, it sounds like!

The 'display grade as' setting is what dictates how you and your students view the grade in the gradebook. You probably have points selected now where you need to select percentage.
When you switch this to percentage you will still be able to enter grades as points if you're using the new gradebook. You'll just need to follow the steps in this guide. How do I enter grades for an individual assignment as a specific grading type in the New Gradebook?
Hello, Christopher Payne and Welcome to the Canvas Community! You can control how the grade displays in the Gradebook by choosing Display as "Percentage" in the assignment's settings. Please refer to the Select Grading Type section of How do I add or edit details in an assignment?
Since this is already possible in Canvas, we've marked the idea for archival.
So I followed the instructions and that option doesn't seem to exist. Is it different for a "Quiz" vs. an Assignment? When you create a quiz it doesn't seem to have that option.
That is correct, Christopher—but that's only the case for classic Canvas Quizzes. In our new quiz tool, Quizzes.Next, the quiz is created as an assignment of the LTI tool type, and the Percentage option will therefore be available, just as it is for any other assignment. Please have a look through the Quizzes.Next User Group to learn more about the new quiz tool.
(And when I was teaching, I used classic Canvas Quizzes, and assigned point values to the questions such that they always added up to 100 points, with quiz scores thereby mimicking a percentage in the eyes of the student.)
