if teachers can see student view students need to have teacher view but not be able to edit anything but just see what being a teacher looks like

You might be surprised to learn that the teacher view of Canvas looks exactly like the student view, but their permissions include the abilities to add, remove, revise and hide content. The reason teachers have a student view is to verify the functionality of their courses from the student perspective - is what's visible or hidden supposed to be visible or hidden, or do the assignments and quizzes function as designed for the student.
Yes, teachers have some other functionality available to them like grading and the course-level settings, but their view of the classroom is the same as yours.
If you are that curious, ask a teacher or one of your elearning admin or support folks to give you a tour. If you were at my school, I would happily provide you that opportunity!
