I'm just getting started with Canvas. Can I see some examples of a 3rd grade?

Ashley, welcome to the Canvas Community! Similar to what Brian said, I'd definitely join the K-12 group in the Community. They have a lot of resources and information that would probably help with this question, as well as get you better acclimated to what Canvas has to offer at the Elementary level.
There are a lot of resources available for Elementary teachers! One of the best things about Canvas is that the course can be customized to your preferences so it matches your classroom environment. It's a journey, so don't' be afraid to test things out before implementing them in your course. (You could always ask your Canvas administrator for a "sandbox" course so you can play and experiment without disturbing the course your students work in!)

Another note: I shared this question with the K-12 group officially, and I also converted your question to a discussion! There are so many possibilities, not one "correct" answer. I hope this discussion takes off and you get lots of ideas!
