When an announcement is posted, does it automatically send an email to the students' email accounts associated with canvas?

While Canvas does not have email, Canvas will send out a notification of new announcement postings to the communication method preferred by the users, and if the user has set their notification preferences to do so. The following lessons from the Student Guide will help you guide/advise your students, and the processes described are the same for all users regardless of role.

Hi Paul Polis yes, by default canvas will send an email notification when an announcements has been made. However, students and staff can amend if, what and how frequently they receive notifications.
