How do I post final letter grades for a course so that students can see them in canvas?

Without more information I'm not sure how to interpret your question. The final grade is viewable by students when they click on the Grades link in the course navigation. It is comprised of every graded assignment you have had your students complete during the term. The corresponding letter grade will be based of the course grading scale you have established or by your institution's default scale if you haven't modified it. If you are asking if it is possible to manually override the final grade or display a final grade not based on assignment scores as tracked within Canvas, neither of these are options currently but there are related feature idea submissions you might want to consider voting for:

I think I'm in the old gradebook still and was having this question. The override final grade instructions (Garth) helped me realize that all I needed was to put my "assignment" that had their numerical scores uploaded already as 100% of the final grade. Yay!
