Override grades

Hi! I wonder how we can override calculated grades in Canvas. For example, I have a "participation portfolio" which is worth 35 % of the grades in the class. This portfolio includes weekly reflections, an event reflection, and participation in three Socratic seminars. The students have been grades on what they have turned in but I still want some leeway in adjusting the grades (for example, if a student has been very active in class, this can override missing some weekly reflections, etc. 

Right now, the grade that is displaying in "Participation portfolio" is often far from the one they will get (for example, they are required to do 10 weekly reflections out of 14 weeks so I am grading the best 10 out of the 14. I have gone through the grades and calculated my own percentages that I would like to enter for the whole participation portfolio. How do I do that?
