First, allow me to clarify. Is it that you want to record an online presentation (without students seeing it live), and then use that presentation as part of an online assignment for your students (using Conferences)? Am I picking up, what you're laying down?
I ask because I want to make sure I'm understanding you, as there may be other tools that may better serve your needs within Canvas

The reason I ask, is because the fantastic tool that is Canvas Conferences is one suited for "live use". I wasn't certain what you meant when you said--or typed: "without people watching the presentation". (In other words: if you want students to view the presentation other that when you are making it, another tool may need to be looked at)

Kindly remember, that conference recordings go away (are deleted) fourteen days after the conference ends.

If you uncheck all the course members and all the course observer members they are uninvited right?
Yes, and no. The Canvas Support Guide for creating a conference states:
You can add any user in your course to your conference. However, once a user has been invited, the user cannot be removed from the conference.
By default, all members in the course will be invited to the conference .
To remove all course observers from the conference invitation, select the Remove All Course Observer Members checkbox . When this checkbox is selected all course members except observers are invited to the conference. (italics mine)
Forgive me Aviance, but it sounds like you are attempting to use Conferences--a tool for live audiences, to participate in a live presentation--to create a non-live presentation for students to view at a later time. Is this correct? if so, this is the wrong tool.
I need to make sure, so I'm not frustrating you here.
If you uncheck all the course members and all the course observer members, they are uninvited right?
Whenever I try that, one of the course members pop up on the canvas conference.

Aviance, as Tim stated earlier, this is not the intended or designed purpose of the Conferences tool. Are you a student? If so, please reach out to your instructor to get clarification on the requirements of the assignment.
If you're a teacher and you need to create a demonstration of how conferences work, you would need to be able to invite other course participants for that demonstration. Perhaps you could initiate the conference in a sandbox course in which you've enrolled some of your fellow teachers as students and ask them to help you simulate the conference experience. Even so, unless you're using the paid version of Conferences, your recording will be deleted after 14 days—meaning that after you complete the simulation, you will need to preserve it via a screen recording tool before it is deleted.
If you need to record a video, the recording tools are built into the Canvas Rich Content Editor (How do I record a video using the Rich Content Editor as an instructor? and How do I record a video using the Rich Content Editor as a student?)
