- Some students cannot enter data into gradebook cells

Without knowing much more about the behavior you're seeing, I'll suggest that Todd's recommendation is accurate. Do you use differentiated assignments in your course? If you do not assign an assignment to a student, that assignment will not be gradable for that student and the cell will be grayed out.

Erin, my students quizzes/tests are all grayed out. They can see the test and take the test, but I have to give them their score and percentage rate- I have no idea if it is even counting toward their final grade as I cannot see it. No, I am not assigning specific content as stated above. I am doing everything perfectly; been using Canvas for years and this has ALWAYS been an issue. Why are the grades gray? See how her score is gray? She can't see it.

You are using a combination of manually and automatically graded quiz questions. The orange links at the top of SpeedGrader show you the questions that need to be manually graded. To do that, click the link to go to a question, and in the top right heading bar, enter the number of points the student should receive in the points field. For instance, question 7 is worth 6 points; based on the student's response, give the number of points the student earned, and you can leave an additional comment in the question if you'd like as well. When all manual questions are reviewed and points are assigned, click the Update Scores button at the bottom of the quiz. Then the quiz will be identified to the student as fully graded. Right now if you go in the Gradebook and see the column for this assignment, you'll see that all cells display the rocket ship icon, which indicates the quiz is not completely graded. When the final score displays in the Gradebook, the student will also see that same score.

By any chance are those possibly differentiated assignments where they have only been assigned to a particular section, group, or set of individuals in the class? I ran into this earlier in the year when troubleshooting a similar issue with a faculty member.
