As an instructor, how do I hide a discussion so that no one sees it until I open it again?

There is no way to easily hide a discussion once students have posted to it. You could place the discussion in an unpublished module, making sure that you have not left a back-door open (disable assignments and discussions content areas), then move it back into a published module when ready; but that just seems like a pain to me.
However, can I ask why you would want to "re-use" a discussion, rather than simply creating new ones?

I responded in greater detail there, but here's the short version.
You cannot completely hide the discussion as Canvas goes to great length that make sure that student contributions are available to the student. What you can do is make it so that a student cannot see what anyone else has written. This can be done by editing the assignment and setting the "available from" date to some point in the future.
