We use a lot of Kahoots in our class that the instructors make based off the test keys. Now the tests will be randomized. How do we help prepare our students for tests? Are we no longer allowed to make our own Kahoots for class?

It is quite easy to develop practice quizzes in Canvas, I use them quite extensively. You can learn how at What quiz types can I create in a course?
I recognize the power of gaming for engaging student is content, so must let you know that Kahoot is still available for you, even if your school is no longer supporting it, because Kahoot has a free version. learn more at Meet Kahoot for Schools.
Also, Kahoot is not the only sheep in the flock. Check out 8 Must Have Interactive Learning Sites for the Digital Classroom.
And finally, there are many interactive applications that integrate well with Canvas, and many of those are free or low cost. Learn more at the EduApp Center.
But still, I want to remind again, that the technology is not the teaching, and I strongly suspect that you have a whole toolbox available in your own mind, heart and hands.
