Do I have to "publish" the course to preview it? In any case, how do get an overview of what I'm creating? Thanks.

Canvas has a feature called "Student View" described in detail in the lesson, How do I view a course as a test student using Student View? You can use this feature without publishing the course. Please let us know if you have any additional questions, and again, welcome!
I can activate student view, but I don’t see the content that I added to one of the Modules.
This can be a sign that the content is not published. You can publish content without publishing the course. Can you post a screenshot of what the modules page looks like from the instructor view or double-check that you've published the content within the module and the module itself?

I noticed various “solutions” for creating journal-like entries. Any other options besides having students use Discussion forums? Also, does Canvas have an icon set to be used with assignments, quizzes, etc. ?

Another question, though. What’s the difference and/or benefit in adding assignment content to an Assignment page or a Page page?
Hey again Howard. Content pages (what you called a "page page") is just for delivering information whereas an Assignment has the functionality of a content page with information delivery, but also includes functionality for assignment submission and grading online. I would recommend checking out (and probably bookmarking) the Canvas Instructor Guide - Table of Contents where you can find a lot of information about these questions and more.
Not to be a niggler, but I have been going through the guides and I’m only asking questions (hopefully) for which there seem to be no clear answers. I did find some information about journals in the Q&A sections, but it’s a hack at best. Surprising to me that Canvas doesn’t have more student-directed learning tools. In any case, I do appreciate your responses (I’m under a wicked deadline to create an entire module in Canvasnot having used Canvas before.), so all help/suggestions are appreciated. : > :
