It turns out there is something wrong with our version of Canvas; there is no place for me to put correct answers, which was what I was trying to ask. I sent a note to the Help Desk, and they were able to replicate the issue and are working on a solution for us. ~Nancy
First, you need to set the question type to formula. The next step depends on whether you're using Quizzes or Quizzes.Next.
In Quizzes, you wrap your variable name in square brackets in the question text. It picks up on those and adds the configuration section after the question text loses focus (move your cursor off the question).

In Quizzes.Next, you need to use a backtick around the variable names. For US keyboards, the backtick is on the tilde ~ key.

There are several pages in the Canvas Instructor Guide that more about creating formula questions.
What the guides don't tell you is that you can have more than one letter for your variable name. They need to start with a letter but then you can have multiple letters or digits that follow. There are a few other acceptable characters, but I would limit myself to those letters and digits.
What is the mean of [x1], [x2], [x3], [x4], [x5], and [george] ?
