I would like to hide some assignment columns in the Grades.

That is correct in the New Gradebook, if you select "do not count this assignment towards the final grade" it will still show in the gradebook.
I have a few assignments in my class where the students do not submit anything; it's more of a placeholder/milestone for a larger project that they turn in at the end of the semester. I have them set as "not graded" in the "Display Grade as" field and they do not show up in the gradebook.

You can Mute an assignment How do I mute or unmute an assignment in the Gradebook? , but the column still displays in the Gradebook.
You can choose to How do I exclude an assignment from the course's final grades? . The assignment will not create a column in the gradebook, but the assignment score will also not be computed as part of a student's final grade.
If you want to hide the column until you are ready to display it, then exclude it, and when you are ready for it to display change that setting.
I am hoping you are not asking how you can use a score to compute a final grade, but never reveal that score to your students. I do not think that is a particularly good idea. Scores are a part of the feedback students use to measure learning progress, and students should always know how their grades are calculated.
I have published the assignment before and tried to set that assignment not be computed to the total grades just now, the assignment colomn appeared an exclaimation point but still in the GradeBook. Do you know if there is any other way to delete that colomn? (The assignment is for training so there is no point for it, I would like to hide this assignment so that the Gradebook will be easier to read).
Could you share a screenshot of the Settings page for that Assignment?
Also, are you using the New Gradebook? I thinks that has an impact, but I am going to have to check on that.
Addendum: I just tested this in one of the courses I teach for another school that is using the New Gradebook. It was a Spring Term course, students had submitted and scores were present. When I checked the box "Do not count this assignment towards the final grade" , then went to the Gradebook, that assignment column and its scores were still in the gradebook. I do not distinctly remember this being how it worked in the past, because I don't think I have ever had the need to try it; but it is certainly not working as I expected it to now.
