I would like to download my student class list along with their exam scores and dates of exam. Is that possible?

I'm not sure if you'd be able to get the dates of the exams, but you can download your class roster and Gradebook via a CSV file. Depending on which version of the Gradebook you are using, here are a couple Guides that should help:

I don’t know if you can help with this question, but……when I invite students to the class they were able to see the other students work/assignments. To fix this as soon as the students finished I would “deactivate” them. This at least kept the students from gaining access to others. When I deactivated them they were unfortunately in the background of the system. My question is…. Is there something I can do when I invite a student to the class that will remove or limit their access to anything other than their specific work?

I'm a little confused when you say that students were able to see other work from their classmates. In general, this shouldn't be possible if all of your assignments are individually submitted. If you had any group work assignments set up in your course, I could see where this might happen. But, in general, when students submit work to you individually, only you and the student who submitted the assignment should be able to see it...nobody else. Further, students should not be able to see grades of other students. That would be a FERPA issue.
You can also make Discussion topics graded (assigning points and a rubric), and due to the nature of how Discussion topics are designed, students can see replies of other students in the course.
It might help for you to describe a case where you say students are able to see other students' work. If you do include screen shots, please take care to remove any student names/grades before sharing those images here in this topic.
