I cannot view my students grades for an assignment?

If you have assigned grades for student submissions, then those grades should display in the Gradebook and in SpeedGrader. Even if you mute the assignment, the student score should still display for you as the teacher.
Can you add a screenshot of what you are, or rather are not, seeing?
I ended up manually entering the grades as I went into the module and downloaded grades. The assignment was for a HESI Comprehensive Practice Exam and in the gradebook it only showed a “-“ in the grade column. When I clicked into the assignment for the gradebook to do speedgrading, nothing came up as well when I scrolled through all the students.

If the exam was set as a Practice Quiz, then the score would not display in the gradebook. That is how Practice Quizzes work in Canvas. You can learn more at What options can I set in a quiz?
"HESI Comprehensive Practice Exam" Was that using the Canvas Quiz feature or using an LTI feature perhaps? Trying to understand if you are using an LTI that maybe didn't offer a grade passback option. If you are willing, a screenshot would be helpful!

I am reviewing older questions here in the Canvas Community, and I stumbled upon your question. I thought that I would check in with you because I noticed that there hasn't been any new activity in this topic since April 23, 2019. In reviewing the conversations, I would agree with Kelley L. Meeusen that you may want to check if the quiz was set as a "Practice Quiz" (What quiz types can I create in a course?). And Beth Crook also brings up a good point about external LTI tools that might not offer grade pass-back options.
