How do I attach documents to a student profile without them actually being an assignment? In otherwords I just want to be able to scan student work and attach to their profile/account as a file for reference.
A student's "profile" is related to their Canvas account rather than the course, and is controlled by them ( seeHow do I edit my profile in my user account as a student? ) so it's not something that you could change or add to as an instructor.
Canvas does allow instructors to display a "Notes" column in the Gradebook for instructors to record notes about students ( seeHow do I use the Notes column in the Gradebook? ), but it only allows text entries, not file attachments.
You could keep a folder in the Files area (not shared with students) with files for each student, though that's not especially convenient to view from the Gradebook.
