if I use the Canvas Polls app can I see which students have participated by name? My idea is to use polls not only for participation by also to take attendance.

Much as I hate to publicly criticize a Canvas application, I think Canvas Polls can go down as a so-so effort at best, and one that (so far as I know) has been pretty unchanged since its launching. The short answer to your question is no. Canvas Polls allows ONLY a multiple choice-type question, and does NOT keep track of the students who have participated. It will only give you the basic percentage of responses for each answer offered. So you can not even offer a short answer-type question where they input their names. For very basic multiple choice questions that are an ungraded activity, it will (barely) suffice.
You may want to take a look at this feature request along with the associated links and Instructure's response: Integrate Polls for Canvas Mobile App with Desktop Version of Canvas . Also, to stay in the Canvas environment, something like a survey may suffice, though to be honest I have not heard what the mobile experience is like for students on a survey. But so long as you follow the recommended best practices for question types outlined in the student guides for quizzes (the iOS link is: How do I take a quiz in the Canvas app on my iOS device? and Android is pretty much the same ), you should be okay. Notice, for example, that a fill in the blank question is acceptable on the mobile devices.

I've been using clickers with canvas and I'm ready to change methods. The quiz idea sounds like a great solution.
