When I look at student grade percentages, some are showing 100% but the student does not have 100% as they did not earn 100% on tests..how do I find the true grade?

I have learned through bitter experience in assisting some of my own faculty members that the Gradebook will not give you an inaccurate number, since it's only calculating under the rules that it has been "given." So it won't be a math issue, unless something is really wrong!
To answer your most direct question of finding the "true" grade, you can have Canvas show you the number of points it is giving by hovering over the Total column until you see a tiny drop-down arrow, and clicking Switch to points, though be aware that students will see that, as well.
