Only plain text content is supported with matching questions, so the short answer is that you don't create a matching question that contains math equations (which are images). Responses to matching questions are presented in a drop-down list so they will unlikely ever contain anything other than plain text answers until that method of delivery is changed.
There are some work-arounds that people have come up with.
The first is that you can use plain-text to express the math content. You're likely to find that unsatisfactory.
One suggestion is to use multiple drop-down quiz question type instead. Here's a document by Stefanie Sanders that explains how to do it for images: Matching quizzes with images . The difference for you is that instead of inserting an image, you insert a math equation instead. However, the responses for a multiple drop down question must be plain text. In other words, this approach will only work if your question is math content and the response is plain text.
Another suggestion is to use multiple choice questions. For these, you can use math content for both the question and the answers. That would give you one question, so if you want to do a matching scenario with (for example) four items, you could create a question group with four questions. The four questions would contain one question each and the responses to each of those questions would be repeated for each question. You may want to put in a text only question before the group of four with the instructions for them.
Finally, you can give up on matching and find a different approach completely. Those of us in the math and sciences are often frustrated by the lack of support within Canvas for our questions. They are supposed to be coming out with a new quiz engine Priority: New Quizzes: General Availability that I've heard may support custom question types and so someone might write that ability. However, I've not been involved with the beta testing for that, so I don't have no definitive answers about what it will or will not do.
