Is there a way in which a teacher would be able to track which "modules" the students have accessed to date ?
Absolutely! Navigate to your Modules list by clicking on the Modules link in your left navigation, and then click on the View Progress button that appears at the upper right. You'll then see a list of all the students in the course in the panel on the right of the screen; the screen will display the progress of the first student (alphabetically) in the course. You will be able to click on each name in the right panel to see exactly which modules students have completed and where they stand within a particular module.

Is there anything in Canvas which allows us to gather or view such data for multiple users? That is, instead of going in to look at each individual student’s module progress, is there a way in which we could see (or generate) a report of the module completion and progress of all the users (students) within a course?
At the current time, a comprehensive report of module completion and progress of all users/students is not available in Canvas, and I'd refer you to this related conversation on the subject: Module progress for entire class

Note that this only works if you have prerequisites set for your modules.
If you don't have any prerequisites or module locks, View Progress tells you that every student has completed every module (even if they have never logged into Canvas)
