How do we emulate student data in new courses?

Has anyone been able emulate student data in courses? In our training model for teachers, we would create a sandbox course that contained student data such as student submissions and discussion posts. The teacher would then need to grade and respond to these items to show they know how to use the system effectively.
In Blackoard we would restore a course and student data would be included. Canvas is unable to do this. Does anyone know a way to emulate student data in a course without having to do thing manually?
