I have tried to change a student password for a student who has yet to activate their course. The student has tried to change their own password but does not receive the email with the link to do so. I have checked to see that we have the correct email on the account and we do. I have also tried to change their password in their profile on Canvas but that doesn't work either. Any suggestions? Thank you.

You will want to view the user details of the student from your admin account and click the pencil icon to edit the login information in their logins field. You will see two fields to enter a new password, twice to confirm that what you entered matches and is intentional. Check out this guide for administrators on this subject here.
