In GRADEBOOK I have categories that I want to delete (For example, QUIZ, TEST, ASSIGNMENT, HOMEWORK).
I cannot find the location to edit and delete these.

Those sound like Assignment Groups that you might have set up on your "Assignments" index page. Is that true? How do I add an assignment group in a course?
You can delete those assignment groups on the "Assignments" index page, but make sure if you delete any assignment group that you first move any assignments out of those groups. How do I move or reorder an assignment?
