[Assignments] Download a zipped folder of all student submissions for a course, in a different subfolder for each assignment?

Problem statement:

It would be helpful if instructors could always access all of their old Canvas courses, and to disallow anybody else from removing old courses from view. Regardless of whether that is changeable, and especially if it is not, it would be helpful to allow instructors to archive a full course for posterity (e.g. for writing rec letters). Would it be possible to add a button which allows you to download a zipped folder of all assignments and student submissions for a course? In the archive, each assignment could be placed in a different subfolder, with the assignment text as a txt file, and all student submissions alongside it in the subfolder.
