So I am taking two courses this summer, and have just finished a semester in which I took 6 courses. On my dashboard, if I put it in card view, I only see the courses that I have favorited, but I don't use Card View because it doesn't accurately show me when responses to discussion boards have come in or other activity; I prefer Recent Activity. Anyway, when I select Courses, I don't see the two courses I am about to start on the list because there are so many listed, and when I go to All Courses, I only have the two current summer courses and two other items favorited. How do I get rid of these old courses from the All Courses list? I have unfavorited them, reloaded the page, favorited and then waited several minutes only to unfavorite again and refresh; nothing seems to work. Some of these aren't even things I need anymore, like my associate's degree pathway, which I finished in December of last year. Could this be a school thing that I need to address with them? Any help would be greatly appreciated, thanks folks, have a great one!

The All Courses page displays all courses you have access to. Your institution may choose to move old courses to a Past Enrollments table lower in the page, but that's not something an individual student can do. Mine has a policy of moving courses to the Past Enrollments table about 12 months after the end of the term.
Setting a course as a Favorite will make it show in the Card View and in the Courses side tab that opens when you click Courses.
This is Canvas' guide on customizing the All Courses page, note that there's not much that you can do: How do I customize my Courses list?
One option may be a script that allows for filtering the All Courses page: Sorting the All Courses list. By editing the script a bit, you might be able to set a default filter to only include the courses you need.
Also, what do you mean that the Card View doesn't accurately show you responses to discussion boards? That's the only option of the 3 that shows me when there are new discussion posts: View Card Details - How do I view my courses in the Card View Dashboard.

I was afraid it had to do with the school. I haven't been able to figure out what their "pattern" is, so to speak; some of my courses were taken right off there, favorite status or not, when my final grade was posted, but others are still on there. Two items are from my associate degree major or transfer pathway; I graduated and transferred at the end of last year, so they should definitely be gone. I will certainly try to edit the script in the filter, that may do the trick, so thank you for mentioning it. And thank you for the information, of course.
As to the Card View thing, whenever I would get a new Notification about a reply or post on a discussion board, if I was in card view the little icon wouldn't have a number or anything by it. No idea why, it may not even be an issue now, but I still prefer Recent Activity. And to see new posts there, you need to be subscribed to the discussion forum or course the discussion is in, I believe. How do I manage my Canvas notification settings? - Instructure Community - 615326 This shows you how to set those up, and I just make sure to have the ones I want set up as daily. When you are looking at the Recent Activities screen, if you click the arrow by Discussions so they open up, you can note the time of the last post in any discussion. That's how I've been doing it for a while now, and since it worked, I never went back to try Card View.
