Daily Reading Log Assignment

I am looking to create a daily reading log assignment. This will be graded a few points for each day they complete their reading log. In my previous LMS it got a bit complicated and I am just checking if I need to make a separate assignment for every single day. This would end up being so many grades in the gradebook by the end of the year. So my preference is one assignment for the entire week. They would log into that assignment each day to log their reading and then finally submit it at the end of the week. I am open to suggestions but my primary concerns- requiring students to log in daily not just at the end of the week, not allowing them to submit until Friday, ease of grading! 

In the past my logs consisted of a quick question each day such as how long did you read, and then who was your favorite character? What was the setting? etc.

Tips on the best way to do this: assignment, quiz, discussion, other ideas?

So, you can make discussions private (at least between students) by autocreating groups of one, which gives you a reading log location.

You can now use interim deadlines within discussions to set submission points.

I'm not sure how you'd get this to grade - there might be something you could do with Canvas Mastery, but I'm not sure how that would play out.

I'm sure around two years ago there was a proposal to add "self peer review" as an option - this would overcome one problem, which is that as far as I know only quizzes will auto-grade.
