Is it possible to put equations in a message sent to an instructor in Canvas? This would be very useful in order to make things clearer when asking questions. Support for LaTeX in the messages portion would be ideal.

This is not currently possible. The inbox and assignment/submission comments are both currently text-only.
There are feature requests open to allow the Rich Content Editor in the inbox conversations and in assignment comments. Since the Rich Content Editor is what supports the LaTeX with the equation editor, that's what would be needed to allow for this.

Unicode is supported, however, and some of the mathematical characters can be entered through Unicode. While it may not be perfect, it may be enough to get the message conveyed.
