I want my kids to work in groups for a project and on my end on the laptop, I can click between people and groups, but on the iPad, there is no option to get to groups. How are the kids supposed to sign up for a group if they cannot see more than just people on the iPad?

You're correct. Students will need to use Safari or another browser to navigate to People then to Groups to sign up. I experienced this myself with a group of students just earlier this week. I try to add this memo in the assignment instructions as a "footnote" (ie: If you're using the Canvas Student app and need to sign up for a group, you will need to do so through Safari.)
There was a feature idea for this a while ago, but it was archived due to low vote counts. If you're interested, you could resubmit it! There would likely be a group of Canvas Community members from the Canvas Mobile Users Group that would chime in.
