How can students sign up for research topics in Canvas?

I'm a teacher and want to set up a jigsaw research experience. Ideally, I want students in two sections to select their topic from one list of options, but I can work around that. How can I provide a list and assure that only one student can choose each option?

@JeniAmburg We do this by linking or embedding Google docs.  Personally I like this best as I can see version history in the event one student erases another student's name to claim that topic.  It also can have people adding names at the same time so you never have to worry about students overwriting each other.  I have seen it suggested to create a page in Canvas and at the bottom, give students editing rights but I always worry that some would be in there at the same time and then only the most recent would save.

There may be other methods as well but this has worked well for us.
