How do I change the options for the roles of a person in my course?

I want to add two instructors to my course, but the only options under role on the people tab are student and observer.

It sounds like your Canvas Administrator has limited that roles are available for Teachers to add to in a course.  I would recommend reaching out to them for support on this issue.
