We are looking to have all grades going forward (from March 20th until the end of the school year) in our district be pass-fail grades. Wondering if there is a way to do this for the whole district that uses Canvas.

Saw this:
As an admin, you can create grading schemes for all accounts associated
with your account.
Once a grading scheme is created for your account, instructors can link the
grading scheme to their courses. However, once a grading scheme has been
used to assess a student, you cannot edit the grading scheme.
Note: Any grading schemes you create in an account will also display within
sub-accounts.
Wondering - does this mean it will delete previous grades?

It will not delete grades. It more or less just translates the % into the final grade. Are you wanting to automatically set this new pass/fail grading schema for all courses this semester?
How would this work if a Pass/Fail option is provided to students?
Meaning not all students will choose a pass/fail option (as in this time of COVID-19)?
How would one go about choosing/offering a grading scheme where some students would be different than their peers?
At this time there can only be one grading schema per course.
