I know how to add rubrics to assignments individually, but this is extremely time-consuming to have to add/edit the rubric per each discussion board, or assignment module.
Is there any way to add my "Discussion Board" rubric to ALL discussion boards at once rather than having to do it board by the board?

Assuming that you are using the same "Discussion Board" rubric for all of your discussion topics, here's an idea for you.
Side note: If you go to your "Rubrics" screen, you should now see your "Discussion Board" rubric listed there. You can click on it to view it, but you'll only see a button to delete the rubric. Normally, you would also see a button to also edit the rubric, but since you are using the exact same rubric in more than one graded item in your course, Canvas does not allow you to edit the rubric on this screen. If you would ever need to edit this rubric, you would need to remove the rubric from all but one of your graded discussion topics. Then, come back to this "Rubrics" screen, and you should be able to edit the rubric as needed. Finally, you would need to re-attach the rubric each of those topics.
You should be able to carry out a similar process for Canvas assignment as well.
