Opening Quiz for Review

When opening a quiz for students to review two weeks after they have taken the quiz, do I need to delete the initial options I originally set for the quiz like "shuffle answers", "time limit", "see only 1 question at a time" when I now select the option for student to see their quiz results within a selected start and stop  time?

Nope, those only apply to when they took the quiz, not to how they can view the quiz results. You can also check and see how they'll look with your test student.
