How can I view a past assignment I submitted and that was graded for a class I had to withdrawl from due to health issues?  Im now retaking the course and can not access and assignment I already completed.

The bottom line is that you can't. Once you withdraw from a class, you will no longer have access to the course shell.

You could try contacting the instructor of that previous course and ask him or her to send you a copy of your work.

However, be careful here. If your previous assignment used Turnitin, then you are going to run into problems resubmitted identical or very similar work. Turnitin will mark it as being "plagiarized." This happens to a student of mine who repeated my class.

There *might* be a way this would be possible...but it would be highly dependent on what policies/procedures that your school has in place for requests like yours.  In my former position as a Canvas administrator, we sometimes had requests for students to get extended access to courses beyond the official end date of the course.  It sounds like, for your situation, you would have to be temporarily re-enrolled in the course.  This would bring back any of your assignment submissions that you and your instructor could see.  The trick for your instructor (and quite possibly your school's Canvas administrator) is that a special section in the course has to be created, and you have to be enrolled in that section.  The section is set with course access dates that only apply to you.  This is all done by the instructor or the Canvas administrator.  There is nothing special that you'd need to do on your end.

I'm not sure if I have completely understood your request (hopefully I did), but I would highly encourage you to have a conversation with folks at your school to see if this was anything they are willing to do for you.  Again, they may have policies/procedures in place for situations like yours.
