Quizzes limiting choices

I have many IEP students and was wondering if there is a way to limit their choices in a multiple-choice quiz?  For instance, the normal quiz makeup is to have 4 choices for the correct answer, is there a way to limit it to two or three?

Hello there, @dcraig1 ...

Yes, you can create multiple choice quiz questions that only have two or three possible choices to pick from.  As you are creating your quiz, you can just delete as many options as you need via the trashcan icon.  As you hover over each of these, you'll see the trashcan icon so you that you can delete them.

Can you edit an already existing quiz so that one or more students has three choices while the rest of the class has four choices?

No, I don't think this is possible.  When you design a quiz question with possible choices (multiple choice, for example), you are specifying all the possible choices for everyone.  You can't vary the number of responses someone would be able to choose from.
