This is quite some interesting behavior that you're experiencing! Have you by chance attempted to use Canvas on a different browser than the one you're using? This issue could range from just being a temporary browser related issue, to an error in your institution's canvas theming if your school's admin set up custom CSS or JavaScript.
I'd recommend..
1. Seeing if you get the same behavior on other browsers.
2. Reaching out to your school's Canvas team to inform them of the behavior.
3. Clearing cache and cookies and restarting your device.
