I have an instructor reporting that Speedgrader is cutting off Word Docs. He has a student that uploaded a ten page submission in Speedgrader, and only the first three pages are showing. When the submission is downloaded, all pages are in the document. At the top of Speedgrader, it indicates "Page X of 3".
I don't know if it makes a difference, but it appears the student is using iOS

We just got an email from Canvas Support indicating that Instructure is aware of the issue with DocViewer only displaying the first 3 pages of some documents, and they are working on fixing it.

If you click on the "Roadmap" button at the top of any page here in the Community website, there is a "Known Issues" option under "Release Information". The one you are looking for is located at: [OPEN] Only the first 3 pages of files preview in ... - Instructure Community. When you go to that page, you'll see a three-dot kebab icon just above the "Related Guides" section on the right side of the screen. From that menu, you can "Bookmark" or "Subscribe" to that page. Or, you could also "Subscribe to RSS Feed" if you wanted. This way, you can refer back to it when Instructure fixes things. Hope this helps!

I'd also like to know when this is fixed. I don't know how to follow or subscribe to someone's support ticket, and Canvas doesn't seem to have any public admission that this is an issue.
