We're just getting started on Canvas and were wondering if the site term date (manually set) is different from the course start date that is pushed from our SIS, which gets precedence?

Both dates can exist separately. By default, a course isn't available to students until the term starts, the course starts, and the course is published, but there's different options you can select to get around both term and course start dates.

Course dates override term dates when manually set, I assume this holds true for SIS integration as well.

"Course dates default to the term dates. However, you can change the course start and end dates to override the term dates. You can create course start and end dates [1] that are within the term or that extend past the term."
