Time and Date Stamp for Anonymous Assignment Submissions?

Hello. I would be grateful if someone could help me with this. Is there any possible way for an instructor to see a date/time stamp on an anonymous assignment submission without posting grades or un-muting the assignment? Does un-muting mean that grades are posted as well? Thank you!
