This change took effect sometime 6/17. When I go to edit pages, I can now only see 2 lines of text, meaning (practically) that I must expand the available window every single time I want to edit anything! My WYSIWYG icons have been "helpfully" compressed so I need to hunt for some I used frequently. Is there any way to get my old interface back, or adjust these settings, or complain to anyone who can register my discontent? 😕 Sorry for the griping but it's already taking me 2x as long to get work done and it's only been a few hours. Thank you!!

It sounds like you are seeing the New Rich Content Editor:
Are you using the Free for Teacher version of Canvas or the version available through your institution?

I'm not sure why the old editor has been retired, but I'd guess it has to do with responsive design for mobile devices and accessibility.

It's through my institution. Thank you for sending the link; it appears that the classic version had an end-life, and maybe our institution just got to that point. Looks like there is no way to revert to the classic view either, which is a shame because this version seems very buggy and not at all user-friendly. But thank you for the information just the same.

Given the classic editor is gone, where can we find instruction for the new editor? My experience to date reinforces the view stated above that this new editor is NOT user friendly; I have already spent several hours on a task that would normally take me 10 minutes. Why can't Canvas allow use of the classic editor as well?

It looks like the release date for the New Rich Content Editor (New RCE) has changed to January 16, 2021...so very soon. You can read more about this in Canvas Release Notes (2021-01-16) - Canvas Community.
