How do I change my last name on my canvas profile?

If you mean your institution's Canvas profile then that depends on how things are set up there. You might need to contact your admin people directly. As your institution is sharing this video 101 - User Settings & Profile Picture on Vimeo  it seems that you are able to change it yourself.
