From what I have found on other people's posts, if a student clicks on another tab, canvas log will mark it
if the student didn't open a new tab, the student opened a pdf file of lecture note saved on his computer instead. Will canvas log mark flagged or 'stopped viewing the Canvas quiz'?

In classic quizzes, I believe "stopped viewing the quiz" happened anytime the quiz lost focus as the primary window. In new quizzes, I think it only records when the student actually leaves the quiz by closing their browser. Another option is to use a tool like lockdownbrowser or proctorio, which intentionally block access to all other windows (as well as cutting and pasting). This forces students who want to look something up to either log out (which is recorded by those programs as well as the quiz log) or to use another device simultaneously (withoout cutting and pasting from what they find). There are options for using a webcam for remote proctoring with both of those tools. Quizzes also have a setting that uses IP addresses to require students to access the quiz from a specific proctored computer lab.
It would be nice if canvas blocked access to a second log in, so that the course information could not be accessed by the same student while a protected quiz was in progress (bypassing the quiz log). It would also be nice if discussions and essay question quiz responses could be sent to programs like turnitin, unicheck, or even grammarly for an automatic plagiarism scan, but currently that requires copying and pasting out of the quiz and into the plagiarism detector.
