Hi @dmanor ,
In Canvas this is known as muting an assignment as the Teacher. This will depend on whether you are using the old gradebook or the new gradebook, however, at the top of this document https://community.canvaslms.com/docs/DOC-12965-4152724338 the first section includes details to point you in each of the possible circumstances depending on your situation.
