Hi  @awe_asabi ...

When you re-submit an assignment to your instructor, you (as the student) only will see the most recent submission.  However, from an instructor's perspective, he/she has access to all submissions for all students, and each is time/date stamped.  So, assuming that you've submitted and then re-submitted the assignment correctly, your instructor should have access to your initial submission as well as the re-submission.  Here is a Guide that shows how instructors can select past and current submissions: https://community.canvaslms.com/docs/DOC-26238-how-do-i-view-the-details-of-a-submission-for-a-stude... (see the section under "Evaluate Multiple Submissions").

I hope this information will be of help to you, Asabi.  Please let Community members know if you have any other questions about this.  Thanks much!
