Hello @CallyMEYNELL - if I had a requirement to export the assignment, rubric, and comments from Canvas I would go to the Assignment page and select the button shown below to download the assignment and annotations to pdf.
I would then use a screen capture tool and snip the rubric and comments and paste them both into a Word document and if needed, convert that to pdf. Then if I wanted to, I could merge two pdf files together into a single document.
Also note that all your uploaded file submissions are saved to your Canvas Files with a Submissions folder.
