Google LTI vs Microsoft 365 LTI vs OneNote with Canvas?

We currently have students download a clinical self-evaluation Word document, which a student will edit throughout the course of the semester by filling out a column and comments for each clinical day.  I would like to move this form to an online platform (i.e. Google vs Microsoft 365 vs OneNote), so students can have access to their forms when they need to fill out the assignment at a clinical site far away from their homes.  Since the forms contain private information, the document will need to be able to be edited by individual students but remain private, and I would like the students to be able to submit the document via the speed grader in Canvas.  I have been attempting to read up on the possibilities of each, but I can't seem to find any Canvas documents that describe quite what I'm wanting to do.  

Does anyone have suggestions on which platform would be best & why?  (I have some concerns that the student email domains at my college differ from the email domains used by the instructors, so I'm worried that that discrepancy might prevent some platforms from uploading/downloading correctly.). Does anyone do anything similar with assignments and, maybe, have some insight into the process?  Or does anyone have suggestions for Canvas documents that I could try reading?

I'd say the fight is between Google and O365. Canvas has some good places to get started in the CanvasLIVE‌ space.

Personal preference? I really like google for all things. GoogleDrive is super easy to me. As far as privacy goes, I think you're sorted for keeping things on private. Only when embedding content into a course does Drive need to be public. If you're concerned, have them use Drive as a way to submit the content which will have the content submitted as a sort of snapshot of the drive as mentioned in theHow do I upload a file from Google Drive as an assignment submission in Canvas? guide.

I had this issue using Office 365; since the students were on a different domain, all the back-end permissions didn't work if you used the share "with my institution" option; it would have worked if I had added students individually, but no way was I doing that for every assignment.

At our institution we use a sub domain for student email.

so staff are    user@swin.edu.au 

and students are    user@student.swin.edu.au

I believe using a sub domain like this makes it possible for administrators in Office365 to place all users as part of the same institution although each can still be grouped for other permissions in the system.

That's how our system is set up as well. When I tried to do this (a year ago or so), our IT dept told me that (per Microsoft) that the instructor & students had to be on the same exact domain. Maybe that's changed since then or maybe our IT department has to do something "behind the scenes". (I assume that the O356  share permissions are in terms of how "your organization" is defined - so I don't know if IT was telling me that how they had it set it up wouldn't allow it and/or they didn't want that for some reason. I honestly didn't have the energy to follow up with them about it.)

If it’s something that you’re keen to resolve, I’d ask your IT to bring in Microsoft support if they need it. In fact, if you reference our setup here at Swinburne University, they can compare the set up differences for you and identify if it really is a possibility or not.

Anything is usually possible with time and/or money when it comes to IT I find. I rarely take no for an answer. In this case, the benefits of the possible educational outcomes should outweigh any issues IT is holding back on. Sometimes all it takes is a request form higher-up and things magically happen
