Don't Allow Students to See the Contents of an Assignment After "Until Date"

Why are students allowed to see the contents of an assignment after the Available Until date? I think it should be treat like it is before the Available From date. They can see the assignment is there but not view it.

 

As a secondary math teacher, I need students to submit pictures of their work that I can annotate for their tests and quizzes. Therefore, I need to use Assignments and not Quizzes when they are actually taking a test. I set the Due Date and the Available From and Available Until times to match the time frame they are allowed for taking the test. The problem is that students who don't take the test at the scheduled time can still view the contents of the Assignment after the Available Until date. This gives the student full access to test until it is rescheduled in the Canvas Assignment. In the high school we are constantly dealing with absent students and rescheduling tests and often we don't know who won't take the test during assigned time.
