Could there be a section for notes you want to write. Mainly homework and when it's due. Without having to make a calendar event.

By "[without] having to make a calendar event," are you referencing students' ability to create their own to-do items? Students can manage their activities in Canvas by adding their own to-do items to their calendar, and that is described in:
