Thanks for sharing this idea. An instructor can add an "available until" date to an assignment. Once that date has passed, the student will no longer be able to submit to that assignment, but will still be able to view the instructions for the assignment.
As this is existing functionality in Canvas, we've archived the idea. If you or your students are experiencing behavior that is not consistent with this, please ask Canvas Support to have a look at the assignment settings.
